Brownies
Serves 12
Ingredients
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
2.
In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in
sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup
flour, salt, and baking powder.
3. Spread batter into prepared pan.
4. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
To Make Frosting:
1. Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar.
2. Frost brownies while they are still warm.
Apple Pie
Pie does not get
better than this. Reducing and concentrating the juices of the apples
make it necessary to use only about half the usual amount of thickener,
resulting in a more pure apple flavor, a juicy filling, and a crisp
bottom crust.

Ingredients
For the crust:
12 tablespoons unsalted butter, cold
2 cups + 3 tablespoons pastry flour or 2 cups bleached all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1-1/2 3-ounce packages (4.5 ounces) cream cheese, cold
2 tablespoons ice water
1 tablespoon cider vinegar
For the filling:
2-1/2 pounds baking apples (about 6 medium), peeled, cored and sliced 1/4-inch inch thick
1 tablespoon freshly squeezed lemon juice
1/4 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 to 1-1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg, preferably freshly grated
1/4 teaspoon salt
2 tablespoons unsalted butter
1 tablespoon + 1 teaspoon cornstarch
Directions
For the crust:
Food processor method:
1.
Cut the butter into small (about 3/4-inch) cubes. Wrap it in plastic
wrap and freeze it until frozen solid, at least 30 minutes. Place the
flour, salt, and baking powder in a reclosable gallon-size freezer bag
and freeze for at least 30 minutes.
2. Place the flour mixture in a food processor with the metal blade and process for a few seconds to combine. Set the bag aside.
3.
Cut the cream cheese into 3 or 4 pieces and add it to the flour.
Process for about 20 seconds or until the mixture resembles coarse meal.
Add the frozen butter cubes and pulse until none of the butter is
larger than the size of a pea. (Toss with a fork to see it better.)
Remove the cover and add the water and vinegar. Pulse until most of the
butter is reduced to the size of small peas. The mixture will be in
particles and will not hold together. Divide the mixture in half and
spoon each half into a plastic bag.
4. Holding both ends of the
bag opening with your fingers, knead the mixture by alternately pressing
it, from the outside of the bag, with the knuckles and heels of your
hands until the mixture holds together in one piece and feels slightly
stretchy when pulled. Repeat with the second bag.
5. Wrap the
dough with plastic wrap, flatten it into discs, and refrigerate for at
least 45 minutes, preferably overnight. (For a pie shell and lattice,
divide it in a ratio of two thirds: one third — use about 9.5 ounces for
the shell and the rest for the lattice, flattening the smaller part
into a rectangle.)
Hand method:
1. Place a medium mixing bowl in the freezer to chill.
2.
Cut the butter into small (about 3/4-inch) cubes. Wrap it in plastic
wrap and refrigerate it for at least 30 minutes. Place the flour, salt,
and baking powder in a medium bowl and whisk to combine. Add the cream
cheese and rub the mixture between your fingers to blend the cream
cheese into the flour until it resembles coarse meal. Spoon the mixture,
together with the cold butter, into a reclosable gallon-size
freezer-bag. Expel any air from the bag and close it. Use a rolling pin
to flatten the butter into thin flakes. Place the bag in the freezer for
at least 10 minutes or until the butter is very firm.
3. Transfer
the mixture to the chilled bowl, scraping the sides of the bag. Set the
bag aside. Sprinkle the mixture with the water and vinegar, tossing
lightly with a rubber spatula. Divide the mixture in half and spoon each
half into a plastic bag.
4. Holding both ends of the bag opening
with your fingers, knead the mixture by alternately pressing it, from
the outside of the bag, with the knuckles and heels of your hands until
the mixture holds together in one piece and feels slightly stretchy when
pulled. Repeat the process with the second half.
5. Wrap the

For the pie:
1. Remove the
dough for the bottom crust from the refrigerator. If necessary, allow it
to sit for about 10 minutes or until it is soft enough to roll.
2.
On a floured pastry cloth or between two sheets of lightly floured
plastic wrap, roll the bottom crust 1/8 inch thick or less and 12 inches
in diameter. Transfer it to the pie pan. Trim the edge almost even with
the edge of the pan. Cover it with plastic wrap and refrigerate it for a
minimum of 30 minutes and a maximum of 3 hours.
3. In a large
bowl, combine the apples, lemon juice, sugars, cinnamon, nutmeg and salt
and toss to mix. Allow the apples to macerate at room temperature for
minimum of 30 minutes and a maximum of 3 hours.
4. Transfer the
apples and their juices to a colander suspended over a bowl to capture
the liquid. The mixture will release at least 1/2 cup of liquid.
5.
In a small saucepan (preferably lined with a nonstick surface), over
medium-high heat, boil down this liquid, with the butter, to about 1/3
cup (a little more if you started with more than 1/2 cup of liquid), or
until syrupy and lightly caramelized. Swirl the liquid but do not stir
it. (Alternatively, spray a 4-cup heatproof measure with nonstick
vegetable spray, add the liquid and butter, and boil it in the
microwave, 6 to 7 minutes on high.) Meanwhile, transfer the apples to a
bowl and toss them with the cornstarch until all traces of it have
disappeared.
6. Pour the syrup over the apples, tossing gently.
(Do not be concerned if the liquid hardens on contact with the apples;
it will dissolve during baking.)
7. Roll out the top crust large
enough to cut a 12-inch circle. Use an expandable flan ring or a
cardboard template and a sharp knife as a guide to cut the circle.
8.
Transfer the apple mixture to the pie shell. Moisten the border of the
bottom crust by brushing it lightly with water and place the top crust
over the fruit. Tuck the overhang under the bottom crust border and
press down all around the top to seal it. Crimp the border using a fork
or your fingers and make about 5 evenly spaced 2-inch slashes starting
about 1 inch from the center and radiating toward the edge. Cover the
pie loosely with plastic wrap and refrigerate it for 1 hour before
baking to chill and relax the pastry. This will maintain flakiness and
help to keep the crust from shrinking.
9. Preheat the oven to
425°F (220°C) at least 20 minutes before baking. Set an oven rack at the
lowest level any place a baking stone or baking sheet on it before
preheating. Place a large piece of greased foil on top to catch any
juices.
10. Set the pie directly on the foil-topped baking stone
and bake for 45 to 55 minutes or until the juices bubble through the
slashes and the apples feel tender but not mushy when a cake tester or
small sharp knife is inserted through a slash. After 30 minutes, protect
the edges from overbrowning with a foil ring.
11. Cool the pie on a rack for at least 4 hours before cutting. Serve warm or at room temperature.
Carrot cake

1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting:
4. In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
Cheese cake

Ingredients
FOR THE CRUST
85g butter melted, plus extra for tin
140g digestive biscuits , made into fine crumbs
1 tbsp sugar , granulated or golden caster
FOR THE CHEESECAKE FILLING
3 x 300g/11oz pack full fat soft cheese (Philadelphia is good)
250g golden caster sugar
3 tbsp plain flour
1½ tsp vanilla extract
finely grated zest of 1 lemon (about 2 tsp)
1½ tsp lemon juice
3 large eggs , plus 1 yolk
284ml carton soured cream
FOR THE SOURED CREAM TOPPING
142ml carton soured cream
1 tbsp golden caster sugar
2 tsp lemon juice
Directions
1. Position an oven shelf in the middle of the oven. Preheat the oven to fan 160C/conventional 180C/gas 4. Line the base of a 23cm springform cake tin with parchment paper. For the crust, melt the butter in a medium pan. Stir in the biscuit crumbs and sugar so the mixture is evenly moistened. Press the mixture into the bottom of the pan and bake for 10 minutes. Cool on a wire rack while preparing the filling.
2. For the filling, increase the oven temperature to fan 200C/conventional 240C/gas 9. In a table top mixer fitted with the paddle attachment, beat the soft cheese at medium-low speed until creamy, about 2 minutes. With the mixer on low, gradually add the sugar, then the flour and a pinch of salt, scraping down the sides of the bowl and the paddle twice.
3. Swap the paddle attachment for the whisk. Continue by adding the vanilla, lemon zest and juice. Whisk in the eggs and yolk, one at a time, scraping the bowl and whisk at least twice. Stir the 284ml carton of soured cream until smooth, then measure 200ml/7fl oz (just over 3⁄4 of the carton). Continue on low speed as you add the measured soured cream (reserve the rest). Whisk to blend, but don't over-beat. The batter should be smooth, light and somewhat airy.
4. Brush the sides of the springform tin with melted butter and put on a baking sheet. Pour in the filling - if there are any lumps, sink them using a knife - the top should be as smooth as possible. Bake for 10 minutes. Reduce oven temperature to fan 90C/conventional 110C/gas 1⁄4 and bake for 25 minutes more. If you gently shake the tin, the filling should have a slight wobble. Turn off the oven and open the oven door for a cheesecake that's creamy in the centre, or leave it closed if you prefer a drier texture. Let cool in the oven for 2 hours. The cheesecake may get a slight crack on top as it cools.
5. Combine the reserved soured cream with the 142ml carton, the sugar and lemon juice for the topping. Spread over the cheesecake right to the edges. Cover loosely with foil and refrigerate for at least 8 hours or overnight.
6. Run a round-bladed knife around the sides of the tin to loosen any stuck edges. Unlock the side, slide the cheesecake off the bottom of the tin onto a plate, then slide the parchment paper out from underneath.
Doughnuts
Serves 10
Ingredients
2 (.25 ounce) envelopes active dry yeast
1/4 cup warm water (105 to 115 degrees)
1 1/2 cups lukewarm milk
1/2 cup white sugar
1 teaspoon salt
2 eggs
1/3 cup shortening
5 cups all-purpose flour
1 quart vegetable oil for frying
1/3 cup butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla
4 tablespoons hot water or as needed
Directions
1. Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
2. In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of the flour. Mix for a few minutes at low speed, or stirring with a wooden spoon. Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double. Dough is ready if you touch it, and the indention remains.
3. Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
4. Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
5. Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up.
Old fashioned Chocolate Fudge
Makes one 8 x 8 inch (20 x 20 cm) pan of fudge
Ingredients
2 cups (400 grams) granulated white sugar
2 squares (2 ounces) (60 grams) unsweetened chocolate, chopped
2 tablespoons light corn syrup
2/3 cup (160 ml) half-and-half (or light cream)
2 tablespoons (28 grams) unsalted butter, cut into pieces
1/8 teaspoon salt
1 teaspoon pure vanilla extract
Directions
1. Grease the bottom and sides of an 8 x 8 x 2 inch (20 x 20 x 5 cm) pan with about 1 tablespoon (14 grams) of room temperature unsalted butter. Set aside.
2. In a heavy 2 1/2 - 3 quart saucepan, place the sugar, chocolate, light corn syrup, and half-and-half. Over medium-low heat stir the ingredients, with a wooden spoon, until it comes to a boil. Cover the pan with a lid for about 2-3 minutes to allow the sides of the pan to wash themselves down and dissolve any sugar crystals.
3. Remove lid and clamp a candy thermometer onto the side of the saucepan and, making sure it does not touch the bottom of the pan, boil the mixture gently (adjust the heat as necessary) until the temperature reaches the soft ball stage (236 degrees F) (113 degrees C). Do not stir or shake. (Wash down the sides of the pan with a pastry brush dipped in cold water if any granules form.)
4. Remove from heat and drop the 2 tablespoons of butter on top of the fudge, but do not stir the butter into the fudge. Allow the fudge to cool to lukewarm (110 degrees F) (38 - 43 degrees C).
5.Remove the thermometer and add the vanilla extract and salt. Beat the fudge (you can do this by hand with a wooden spoon or with an electric hand mixer) until it begins to lose its shine and is nice and creamy. Pour into the prepared pan and let cool for several hours before cutting into squares. Store and serve at room temperature.
Banana Nut Bread
Serves 12
Ingredients
1/2 cup of butter, softened
1 /2 cup of white sugar
1/2 cup of brown sugar
2 eggs
1 cup of flour
1/2 cup of whole wheat flour
1 tsp baking soda
1 tsp salt
1 cup very ripe bananas, mashed
1/2 cup of sour cream
1 tsp vanilla
1 cup of pecans, chopped
Directions
1. Place the butter, sugar, vanilla, and eggs together in a bowl and beat with a mixer on low until creamy.
2. Preheat the oven to 350 degrees
3. Combine the dry ingredients in a separate bowl and mix well. Slowly add the flour mixture to the sugar mixture.
4. Add the bananas, sour cream, and nuts, stir well to combine.
5. Pour into a 9x5x3 loaf pan that has been coated with cooking spray.
6. Bake for 1 hour or until a tester inserted into the center comes out clean. Cool on a rack. Slice and serve slathered with butter.
Chocolate Chip Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
